In the first of a three-part series on antioxidants, we will look at vitamins and minerals which have antioxidant roles in the body. But first, why antioxidants are awesome.
What Is a Free Radical?
The process of living (breathing, metabolism, energy production) creates unstable molecules — free radicals. Free radicals are intermediates of oxygen, including superoxide and hydroxyl radicals. Exercise, for instance, increases oxygen reactions, increasing the number of free radicals. There are environmental sources of free radicals as well. Sunlight, atmospheric ozone, pollution, tobacco smoke, and pesticides/herbicides (consumed on our food or ingested from the air) all create oxidative damage. These free radicals have unpaired electrons, whereas stable molecules such as amino acids and glucose are held together by
paired electrons. A molecule with an unpaired electron looks to steal an electron from another molecule, thus creating a destructive cycle. Insidiously, after the rogue molecule steals a neighbor’s electron it does not regain its original form and function but is still unchecked in spreading havoc.
These reactive molecules can cause cellular breakdown in a variety of ways:
- They disrupt, break off or puncture a stable cell’s membrane;
- They make membranes brittle by fusing lipids and proteins;
- They mutate and destroy genetic material;
- They cause damage to immune cells.
Awesome Antioxidants to the Rescue!
An antioxidant is a substance which neutralizes the free radical and fights the oxidation it caused. It does this by supplying the missing electron or removing an extra one to stabilize the rogue molecule. The antioxidant is now technically made a free radical itself, but its structure makes it many times less destructive than the original free radical. Awesome!
One of the most accepted theories of the process of aging in the human body is that of the free-radical theory. In simple terms, wear and tear on cells (oxidation) caused by damaging free-radical molecules is a major contributor to aging. With this theory comes the understanding that antioxidant nutrients help to lessen the damage and thus slow or prevent some of the conditions and diseases which come with aging. Beta-carotene in combination with vitamins C and E, for example, has been shown to reduce the risk of many types of cancer, cataracts, macular degeneration, heart disease, and respiratory ailments such as asthma.
Vitamins as Antioxidant Nutrients
The antioxidant nutrients found in food are absorbed during digestion and then travel through the bloodstream to reach cells and organs. The primary antioxidant nutrients are beta-carotene (pro-vitamin A), vitamin C, vitamin E, and the mineral selenium. These are all distinct in chemical structure and nature.
1) Beta-Carotene
Beta-carotene is a fat-soluble nutrient. Whether taken as a supplement or when consuming foods rich in this, it should be ingested with other fatty foods to enhance absorption. Interestingly, in food the beta-carotene is bound in tight complexes, making absorption difficult, and supplements are better absorbed. This nutrient functions in several ways, both preventing formation of free radicals and disabling existing ones by quenching a highly reactive oxygen called singlet oxygen. It quenches UV radiation free-radicals in the eye as well as in the skin, it protects epithelial tissue in the lungs and may ward off cognitive decline.
In the liver beta-carotene is converted to vitamin A, an essential nutrient. The advantage of dietary beta carotene is that the body only converts as much as it needs. Excess vitamin A is toxic and toxic vitamin A levels can occur if you consume too many supplements. For this reason many multivitamins have a reduced dosage of vitamin A, replacing it with beta-carotene.
Food sources include anything with orange and red pigments generally: apricots, carrots, squash, pumpkin, as well as green vegetables like spinach and endive. Solaray’s
Food Carotene provides multiple carotenoids in addition to 25,000 international units of beta-carotene from a natural algae source.
2) Vitamin C
Vitamin C is a water-soluble nutrient, thus working primarily in areas of the body like plasma, lung and eye fluid, and interstitial (between cells) fluid. Functions include white blood cell activity and other immune system biochemistry. Collagen formation requires vitamin C. When under physical stress such as illness or injury or extreme temperatures, levels of vitamin C plummet and need to be replenished. The adrenal glands contain large amounts of vitamin C. It is regenerated by vitamin E, and in turn can regenerate vitamin E.
Food sources include fresh fruits and vegetables: bell peppers, citrus, broccoli, cauliflower, okra, berries. Recently supplements have been introduced which bind the molecule to lecithin or another fat to improve absorption and increase activity in the body. Dr Mercola’s
Liposomal Vitamin C for example, increases absorption with a phospholipid from sunflower lecithin.
Also look for products which include bioflavonoids (rutin, quercetin) which increase absorption and provide their own antioxidant, anti-inflammatory benefits. Solaray’s
Super Bio C is an excellent combination of a multiple-sourced vitamin C (acerola, rose hips) with a 700 mg blend of bioflavonoids. Plus, this buffered vitamin C is two-stage time release, so it’s fast acting and long lasting.
3) Vitamin E
Vitamin E is a fat-soluble superstar, protecting the lipids of every cell’s membrane. These membranes are susceptible to rancidity, just like vegetable oils. It also scavenges free radicals in the blood. Increased consumption of heart-healthy mono- and polyunsaturated fats is a trend these days, with good reason. However, these healthy fats will also increase one’s need for vitamin E to protect body tissues from the oxidation which will eventually occur. The more unsaturated a fat is the more susceptible to rancidity and oxidation it is. Flax oil, fish oil and other omega-3 fats are examples here. One study found that the addition of cod liver oil to the diet increased the vitamin E requirement nearly 100-fold.
In supplements, always look for the natural-source vitamin E (d-alpha tocopherol) rather than the synthetic dl-alpha form. Evergreen Nutrition carries only the natural, well-absorbed d-alpha form of this crucial vitamin.

4) Selenium
Selenium is an essential trace mineral. What makes this mineral special is that it is not only a potent antioxidant by itself, it also acts in concert with vitamin E against some of the more nefarious free radicals. In addition, it forms part of the powerful antioxidant enzyme glutathione peroxidase that neutralizes harmful hydrogen peroxide molecules both intra- and inter-cellularly. It can prevent oxidation of polyunsaturated fatty acids like its cohort vitamin E, and maintains elasticity of body tissues. It is crucial for thyroid health and a deficiency can lead to thyroid problems. It is also involved in reproductive health.
Food sources of selenium are brewers and nutritional yeasts, nuts (especially Brazil nuts), organ meats, seafood, whole grains and tofu. Supplements range from 50-200 mcg. Look for the selenomethionine or methylselenocysteine forms, such as Jarrow’s
Selenium Synergy which also includes vitamin E.

Unfortunately, humans (as well as animals) are natural hosts for viruses and other pathogens. In this newsletter we will take a look at the demonstrated antiviral benefits and effects of the red marine algae (RMA) species.
There are over 7,000 species of red algae in the phylum Rhodophyta. Most of them are marine algae with a small portion being fresh-water species. Published research dating back decades has shown several species to have pronounced antiviral as well as anti-tumor activities. In particular, the Gigartinaceae and Dumontiaceae strains have garnered scientific interest for their amazing immune supporting properties.
Compounds Present in Red Marine Algae
Unique protein-bound carbohydrates known as sulfated polysaccharides seem to be responsible for the major antiviral activity of red marine algae. Also present in red marine algae are phytosterols and sterolins which may have their own benefits to offer. The mechanisms for the antiviral activity of RMA include blockage of viral binding sites on cell membranes (by forming a shield around the cell membrane preventing pathogens from entering) and inhibition of the enzymes required for viruses to infect their host (that’s us).
Antiviral Activity of Red Marine Algae
The unique polysaccharides present in red marine algae have demonstrated suppression of herpes viruses including HSV-1 (oral), HSV-2 (genital), HSV-6, as well as the related cytomegalovirus and the viruses that cause chicken pox and shingles. In addition, Gigartina extracts were also shown to be effective against the two Herpes strains that were reported to be resistant to the antiviral drug acyclovir.
Red Marine Algae Supplements
Red marine algae is available in supplement form as well as a topical ointment. Pure Planet offers Red Marine Algae Plus, a combination of both Gigartina and Dumontiaceae algaes with the addition of phycocyanin-rich Spirulina, a fresh-water blue-green algae shown to benefit the immune system as well. Not Just for Sleep Anymore!
In
Part 1 of this newsletter we learned that melatonin is not produced solely by the pineal gland, as previously thought. Research now suggests that it is also produced in the bone marrow, thymus, as well as some gastrointestinal cells. Each of these influences the immune system and melatonin seems to be inextricably linked with healthy immune function. Receptors for melatonin are found throughout the body including immune system cells.
Anti-inflammatory Protection & Immune Influence
Many of us know that
melatonin is linked to circadian rhythm in the body. But did you know that nearly all immune cells have a circadian variation which is influenced by sleep? During nocturnal sleep, the number of white blood cells (monocytes), part of the innate immune system, is lowered. During the day, levels then rise again in the following afternoon and evening. Prolonged sleep disruption has been shown to induce a pro-inflammatory state. Ultimately, melatonin influences the circadian variation of immune response as well as inflammatory cytokines.
Melatonin has been shown to lessen the detrimental pro-inflammatory effects of a sleepless state. It has also been shown to increase natural killer cell production and reduces levels of Tumor Necrosis Factor (TNF-α), a marker of high inflammation. Many human studies have shown that in conditions associated with chronic inflammation melatonin reduces levels of C-reactive protein, also a marker for inflammation.
Melatonin for Respiratory Health
Melatonin has been shown to improve certain markers of lung function as well as to reduce pulmonary (lung) inflammation. Higher levels of melatonin are associated with positive outcomes in respiratory illness, as has been shown in human studies. Several studies involving newborns with respiratory distress syndrome (RDS), showed that high doses of melatonin dramatically lowered inflammatory markers such as TNF-α and Interleukin 8 (IL-8) in their lungs in addition to reducing the occurrence of sepsis. Pulmonary function was improved in all babies receiving the melatonin. Other conditions such as COPD, asthma and pulmonary fibrosis have shown airway inflammation to be improved with melatonin therapy.
Anti-Infective Effects & More
Melatonin has also been investigated as a treatment for (severe) infections. In sepsis, for instance, inflammation and oxidative stress contribute to organ failure. The hormone’s anti-inflammatory, antioxidant and immuno-modulatory properties have shown to benefit this life-threatening condition in which key body antioxidants are depleted as well as melatonin production in the pineal gland. Several animal studies have revealed melatonin to reduce viral load and in combination with other antiviral medication it has a synergistic effect.
Researcher Dr. Roman Rozencwaig is one of the foremost melatonin authorities in the world. He believes that, in higher doses than typically used to improve sleep, melatonin can benefit immunity through multiple mechanisms and thus act as an antibacterial, an antiviral and even be beneficial for parasitic infections. His research has shown that pre-treatment with melatonin in respiratory-virus-infected mice resulted in marked reduction of acute lung oxidative injury as well as dangerous inflammatory cytokines. This has implications for use in other respiratory infections.
Rozencwaig’s research, spanning more than 30 years, has also shown melatonin to regulate stem cell function, promote apoptosis (cell death) of cancer cells and to regulate and balance bone formation and loss. One interesting find was that people who had been taking melatonin regularly seem to have fewer upper respiratory infections.
All in all, there is much more than just improved sleep for people who supplement with
melatonin. Dr. Rozencwaig recommends that people start with 0.5 mg to 3 mg in the evening. As people age, it may be beneficial to increase the dose to 5 mg, depending on health. (Using a
liquid melatonin makes it much easier to customize dosing.)
Which Whey is Best for You? Choose 1, 2 or Both!
Whey protein has long been considered the benchmark for athletes to use as it is so highly bioavailable. In addition, it is unsurpassed at building/maintaining muscle mass. This is due partly to its high biological value (usability) as well as its high level of branched-chain amino acids (BCAAs) that are primary fuel for muscles. For many years, when protein powders were consumed primarily by athletes or body-builders, these attributes were well-known and appreciated. Protein powders today are not only much more widely available but are in demand by a much broader demographic than just athletes. What is Whey Anyway?
There are two main proteins in milk: casein and whey. Simply put, casein is the solid protein, or curds, and whey is the liquid protein and amino acid components extracted during the cheese making process. Despite the source, there is very little lactose or casein in regular whey products so people with these allergies/sensitivities generally are able to tolerate whey protein products.
Concentrate vs Isolate
There may be some confusion over the difference between these two types of whey protein. In a nutshell, whey isolate contains more protein per gram (and serving) than a concentrate. Generally isolates contain about 90-96% protein content. In contrast, concentrates are 12-20% lower in protein content, containing 25-89% protein. A typical isolate, for instance, contains about 24 grams per serving, being the high end. There is one more major difference between the two however, and that we will explore below.
Whey Concentrate’s Compounds
The processing to make an isolate for its higher protein levels removes a large range of micronutrients, some of which possess great value. This makes a quality whey protein concentrate a valuable, medicinal food. Lomatium
This herb first came to attention during the Spanish influenza epidemic of 1918-1919. More than 670,000 people in America died from this strain of flu.
Lomatium grows profusely in the American west and northwest, and the native peoples there used it as a sort of panacea. The Washoe tribe in Nevada used the plant to treat members of the tribe who had fallen sick during the epidemic. There was not a single death in that tribe from influenza or its complications, although numerous natives died in other parts of the state where the root did not grow.
After that, lomatium began to be used by physicians with astonishing success treating even the most virulent types of flu. It is a powerful tonic to the respiratory mucous membranes. It is equally a bronchial protectant, expectorant and antiseptic, cleansing the lungs. In recent times it has been used to successfully treat upper respiratory viral infections, all influenza strains, SARS (a coronavirus), and pneumonia. Renowned herbalist Stephen Harrod Buhner, in his book
Herbal Antivirals: Natural Remedies for Emerging & Resistant Viral Infections, recommends it specifically for emerging flu strains, and professes that there is nothing better for serious, debilitating flu, swine flu, avian flu, or severe pneumonia. It is a systemic antiviral, especially for upper respiratory viral infections. He recommends it combined with other herbs such as licorice (antiviral) and pleurisy (a lung tonic). Its antiviral properties have been shown to benefit Epstein-Barr, hepatitis and HIV, in addition to the respiratory viruses.
Elder
Sambucus niger, the most commonly used medicinal species of elder, grows all over the world, and the parts used medicinally are, generally, the fruit and flower, although other parts of the plant have been used as well. The berries have shown good activity against influenza and other enveloped viruses, especially respiratory.
Elder inhibits viral replication, binds viruses, inhibiting them from infecting host cells, and is directly virucidal (kills viruses). Elder also is anti-inflammatory and diaphoretic (induces sweating). As well, some compounds act to stimulate specific immune response. The flavonoids in elder are highly active against influenza viruses, but its other compounds have been shown to be active against a broad range of viruses, including herpes simplex, Epstein-Barr, hepatitis B and C, rhinoviruses, dengue, and SARS and other coronaviruses.
Olive Leaf
Olive leaf extract, (and its attendant compounds, namely oleuropein), has shown pronounced antimicrobial activity. It is both antiviral and virucidal. It has been tested on and shown to have activity against influenza A and B, polio, parainfluenza 1 and 2, and herpes. Olive leaf extract’s oleuropein appears to interfere with viral infection by directly inactivating the virus or by preventing the virus shedding, budding or assembly at the cell membrane. It can penetrate infected host cells and irreversibly inhibit viral replication. In addition, it directly stimulates phagocytosis (the “Pac-Man” activity of immune cells to fight invading pathogens). In essence, it selectively blocks an entire virus-specific system in the infected host, making it a true antiviral compound.
Cordyceps
Technically not an herb, the mushroom
cordyceps (Cordyceps sinensis) is not
highly antiviral, but it is nonetheless included in this list due to its profound support of both the respiratory and immune systems. As an antiviral, it has been shown to be active against influenza (H1N1), herpes simplex, and hepatitis B. Cordyceps down-regulates certain inflammatory cytokines and up-regulates others that are specific for controlling overactive inflammation responses in the body. It is an effective immune system modulator as well, reducing or enhancing immune activity where required.
Cordyceps is a powerful lung and overall respiratory tonic (protector), assisting with multiple facets of lung function. Extracts have been shown to relax bronchial passages, loosening bronchoalveolar fluids allowing for a productive cough. It also allows for discharge of excess fluids (mucus) from the lungs and windpipe, an action highly desirable in the more severe respiratory viral infections such as coronaviruses which can cause massive inflammation and destruction in the respiratory passages and lungs. Compounds in cordyceps facilitate respiration and strongly reduce lung inflammation. It is suggested for asthma and more serious lung conditions. It has been used with great success in the treatment of COPD and bronchitis. In respiratory viral infections, this mushroom’s benefit cannot be overstated.

Seasonal Affective Disorder
During the winter months when days are markedly shorter and temperatures drop below comfort level, many people may feel sad or down, chalking it up to “the winter blahs” or simply a pining for the sun. These mild symptoms may be a sign of seasonal affective disorder (SAD). SAD is characterized by recurring bouts of depression, increased appetite, and an increased need for sleep. This is different from most depressive disorders which are characterized by sleep disturbances and diminished appetite. For true SAD, the symptoms must occur only in the fall/winter and decrease as days lengthen, becoming absent in the spring/summer. Seasonal affective disorder tends to be more prevalent in the higher, northern latitudes, and also tends to occur more often in women than men. Seasonal changes in the amount of daylight appear to be responsible for the incidence of SAD, although the precise mechanism by which symptoms arise is hypothesized.
Nutritional Support for SAD
Much research seems to point to low levels of important neurotransmitters in people with SAD. Conventional treatment for SAD includes antidepressants. In a nutshell, the amino acid tryptophan converts to
5-Hydroxytryptophan (5-HTP) which converts to serotonin which is converted to
melatonin. A healthy mood is dependent upon a balance of these with serotonin of primary importance. Approaching treatment from a nutritional perspective, we know that the pathways involving tryptophan, serotonin and melatonin require multiple co-factors for proper production and balance.
SAMe
One supplement which may be extremely beneficial for alleviating SAD is the amino acid derivative S-adenosyl-L-methionine,
SAMe for short. This compound is manufactured within the body and is required for the conversion pathway of serotonin.
By virtue of raising serotonin levels quickly, it enhances mood and relieves depression. Many studies have confirmed that SAMe is significantly more effective for the treatment of depression than traditional pharmaceutical antidepressants. The suggested dosage for SAMe is 200-400 mg daily.
Vitamin D
By now everyone knows
vitamin D as the sunshine vitamin. Since a lack of sunlight in the winter months may lead to possible deficiencies in this vitamin, supplementation during this time is wise, particularly here in cloudy, rainy Oregon. Low serum vitamin D levels have been shown to correspond with depression. Also, clinical studies have demonstrated the ability of vitamin D to alleviate the depression that occurs with seasonal affective disorder. Dosages of 2,000-4,000 IU daily are recommended.
Magnesium
The importance of this mineral cannot be overstated with regard to general health. Vital for healthy cardiovascular function and nervous system support, supplementation with
